Calculate Break-Even Covers
How It Works
The contribution margin is how much each customer contributes toward covering your fixed costs and generating profit. It's calculated as:
Contribution Margin = Average Check × (1 - Variable Cost %)
Your break-even point is the number of covers (customers) needed to exactly cover your fixed costs:
Break-Even Covers = Fixed Costs ÷ Contribution Margin
Every cover above break-even generates profit equal to your contribution margin. Every cover below means you're losing that amount.
Variable Cost Reference
| Restaurant Type | Typical Food Cost % |
|---|---|
| Fast Food / QSR | 25-30% |
| Fast Casual | 28-32% |
| Casual Dining | 30-35% |
| Fine Dining | 28-35% |
| Bar / Pub (drinks focus) | 20-25% |
| Pizzeria | 25-30% |
Note: Variable costs also include disposables, credit card fees, and other per-transaction costs. Add 3-5% to food cost for a more accurate estimate.
Tips to Lower Your Break-Even Point
- Increase average check: Upsell appetizers, drinks, and desserts
- Reduce food costs: Optimize menu, negotiate with suppliers, minimize waste
- Lower fixed costs: Renegotiate rent, optimize staffing schedules
- Menu engineering: Promote high-margin items, remove poor performers
- Improve table turnover: Serve more covers in the same hours
