Understanding Recipe Costing

Recipe costing is essential for restaurants and food businesses to maintain profitability. It accounts for the true cost of ingredients, including waste from trimming, peeling, and cooking loss.

Key Formula

Effective Cost = (Qty Used × Unit Price) ÷ (1 - Yield Loss %)

Yield loss accounts for the unusable portion of an ingredient. For example, if you buy 1 lb of onions but lose 10% to peeling and trimming, you only get 0.9 lb of usable product.
